Spring in Ayurveda is the Kapha season, which represents the elements of earth and water and the heaviness of mud. As the temperature rises, the days get longer and brighter, you start to feel some shifts in your body. There is a desire to be outdoors, become more active and eat lighter. While in winter we enjoyed and craved heavier and hot meals like soups and stews, spring is the perfect time to start eating lighter yet nutritious.
When spring comes, I say goodbye to my raw oats with cinnamon and cardamom, and I start to crave more fruits and vegetables.
I regularly make this green smoothie, which contains a lot of fiber, vitamins and minerals and also tastes delicious. I use organic products, but see what is possible for you.
Recipe (ingredients for 1 smoothie):
- 100 grams of spinach
- 100 gr romaine or butter lettuce
- 40 gr coriander
- 40 grams of parsley
- 3 celery stalks
- 1/2 medium apple
- 1/2 medium pear
- 1/2 medium mango
- juice of 1 orange
- juice of 1 lemon
- 2 tsp Atlantic dulse flakes
- 1 tsp spirulina
Place all ingredients in a high powered blender and blend for 2-3 minutes until smooth. If you want your smoothie colder, add a few ice cubes or put it in the fridge for 30 minutes. I prefer to drink my drinks and smoothies at room temperature because it is much healthier for your stomach and digestion.
